Extra-Virgin Olive Oil: The Finishing Touch That Changes a Pizza

Some ingredients build a pizza during baking; others complete it afterwards. Extra-virgin olive oil belongs to both worlds. Used with care, it connects tomato, cheese, vegetables and dough while adding aroma rather than heaviness. A small ingredient with a large job At Storia, we have researched every core ingredient since opening in September 2023. Our goal is not to chase luxury labels. It is to choose high-quality products that make a real difference on the plate while keeping our Pizza al Taglio affordable. A good extra-virgin olive oil should taste fresh and balanced. Depending on the olives and harvest, it may carry green, fruity, peppery or gently bitter notes. Those qualities help brighten tomato sauce and give roasted vegetables a cleaner finish. How we use olive oil Our tomato sauce begins with carefully selected Italian peeled tomatoes. We season it ourselves with extra-virgin olive oil, salt and pepper. The recipe is deliberately simple: the oil rounds the natural acidity of the tomato, while salt and pepper sharpen its flavour without hiding it. We also use olive oil as a finishing ingredient. Added after baking, its aroma remains clearer because it has not spent the full baking time under intense heat. A thin, controlled drizzle can make basil more fragrant, artichokes more expressive and the crust taste fuller. More is not better High-quality oil deserves precision. Too much can make a pizza greasy and soften the base. Too little adds nothing. The right quantity supports the toppings and preserves the crispness that defines Pizza al Taglio. This matters even more for catering and large orders. Trays may travel and wait before serving, so every source of moisture and fat must be controlled. Careful use of olive oil helps the pizza remain balanced from the kitchen to the event table. Quality customers can taste We judge ingredients by performance, not prestige. The oil must complement our dough, work consistently across different toppings and deliver flavour at a price that allows us to serve excellent pizza every day. That principle guides Storia’s kitchen: research first, then choose the ingredient that genuinely improves the pizza. Whether you order one slice or arrange catering for a group, the same carefully selected olive oil and the same attention go into every tray.
