Why SICA Tomatoes Are at the Heart of Our Pizza al Taglio

A great pizza sauce should taste of ripe tomatoes—not sugar, heavy seasoning or unnecessary ingredients. At Storia, the sauce on our Roman-style Pizza al Taglio begins with SICA peeled tomatoes from Italy, supplied to us in Berlin by Italimentum.
Since opening Storia in September 2023, we have researched every important ingredient with one goal: to make the highest quality pizza we can while keeping it affordable. For us, quality is not about choosing the most luxurious or expensive label. It is about finding products with honest flavor, reliable performance and a clear purpose in the finished pizza.
Why we chose SICA peeled tomatoes
Tomato sauce is one of the simplest elements of pizza, which means there is nowhere for poor quality to hide. We chose SICA peeled tomatoes because they give us the clean tomato character and consistency we need for Pizza al Taglio. The tomatoes arrive whole and peeled, allowing us to control the final texture and seasoning ourselves.
We prepare our sauce in-house and keep the recipe deliberately simple. We mix the tomatoes with high-quality extra-virgin olive oil, salt and pepper. This balanced preparation creates our own signature tomato sauce: fresh, rounded and strong enough to complement our four-day sourdough base without covering its flavor.
A brief history of tomatoes on pizza
Tomatoes came to Europe from the Americas in the 16th century, but Europeans did not immediately treat them as an everyday food. Over time, they became an essential part of southern Italian cooking. By the 18th and 19th centuries, tomato-topped flatbreads were closely connected with the food culture of Naples and helped shape what the world now recognizes as pizza.
Roman Pizza al Taglio developed its own identity: baked in rectangular trays, cut into slices and valued for a light interior and crisp base. Tomato sauce remains fundamental here too. Its acidity balances olive oil and cheese, while its natural sweetness becomes more concentrated in the heat of the oven.
Quality that works for one slice—or a large order
A carefully chosen tomato matters every day, whether we are serving one guest in Berlin-Mitte or preparing catering for a company event. Large orders demand consistency: every tray should have the same balanced sauce, airy sourdough base and carefully selected toppings.
That is why our approach to catering starts long before an event. It starts with dependable ingredients and recipes we can reproduce without shortcuts. When many guests eat at the same time, quality should not become less personal. Each slice should still taste like Storia.
Our promise since September 2023
From the beginning, we have tested and compared ingredients instead of simply buying the costliest option. Our choices are guided by flavor, quality and value. Working with a specialist supplier such as Italimentum gives us access to high-quality Italian products in Berlin, while our own preparation turns those ingredients into something distinctive.
SICA tomatoes are a perfect example of this philosophy. They are not a decorative luxury. They are a hard-working, high-quality ingredient at the center of our pizza: carefully selected, simply prepared and made to be enjoyed by everyone.
